Ingredients
6 tortillas, torn
6 eggs
1/4 c milk
1/2 onion, chopped
1/2 tomato, chopped
1/4 c salsa, green or red
handful shredded cheese
Cut fruit...melon, peaches, apples, banana
Directions
1. Grease 8x8 baking dish.
2. Place torn tortillas in bottom of dish.
3. Egg Mixture: Whisk eggs and milk. Add tomatoes, onions and salsa.
4. Pour egg mixture over tortillas.
5. Sprinkle cheese over top.
6. Bake 325 for 30 minutes or until golden brown on top. Cool 10 minutes.
7. Cut your favorite fruit to serve with it.
Slow Cooker Orange Chicken
8 small boneless skinless chicken thighs
3 Tbsp. flour
1/3 cup orange marmalade
1/3 cup BBQ sauce
2 Tbsp. soy sauce
1 Tbsp. grated ginger
Toss chicken with flour in slow cooker.
Stir in all remaining ingredients; cover with lid.
Cook on low for 6-8 hours.
Makes 4 servings.
